Extra Virgin
Olive Oil · Selected Intense Fruity
A so called “gourmet”,
“from author” or “premium”
oil. It is a “coupage” of different
consignments of “Arbequina”, "Empeltre",
“Arbosana” and “Frantoio”
olives. An oil with all desirable traits
is obtained, it is what is called an “all
round” olive oil. It is available
in dark glass, high quality vessels with
250 ml and 500 ml capacity, which convey
a very well cared image. The amount produced
is very limited, following carefully compiled
elaboration protocols with different harvesting
dates, mostly early ones. Early harvest
emphasizes its most important trait: the
fruity flavour.

m above sea level.
Varieties: “Arbequina”, “Arbosana”, "Empeltre" and
“Frantoio”.
Harvesting season:
from October 15th to November 10th.
Decanting system:
Continuous, dual phase.
Aspect: Filtrated,
transparent.
Density: Medium
fluidity.
Colour: Green
with golden glare.
Aroma: Intense
fruity, fresh and clean, very complex, broad
vegetable background with artichoke, green
tomato, apple, bitter almonds and also fresh
aromas of mint and rosemary.
Taste: Powerful,
harmonious. Delicate and elegant, characterized
by a sweet background yielding bitter and
peppery notes with strong character and
equilibrium. Long and complex aftertaste,
rich in vegetable and spice notes.
Pairing: Grilled
red meats, tuna or meat carpaccio or tartar,
vegetable soups, fresh or cured cheese,
tomato salad, tasty fish, pasta or rice.
